What Is Dulce de Leche?

It's right there in our name, so it's only fair we explain it. Dulce de leche (DOOL-say deh LEH-cheh) is a soft, spoonable caramel made by slowly cooking down milk and sugar until it turns golden, glossy and deeply toffee-like.

Caramel, but not quite

Regular caramel is sugar cooked on its own. Dulce de leche is milk and sugar cooked together — so it's gentler, creamier and less bitter, with a flavour somewhere between toffee, butterscotch and condensed milk. It's a staple across South America, and once you've tried it you'll understand the obsession.
